Instructions

Step 1: Prepare the Ingredients

  • Pat the diced beef dry with paper towels and season generously with salt and pepper. This helps the beef brown nicely.
  • Dice all the vegetables and set them aside.


Step 2: Sear the Beef

  • In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the diced beef in batches, browning each side for about 3-4 minutes until a crust forms. Transfer the seared beef to a plate.


Step 3: Sauté the Vegetables

  • In the same pot, add the remaining 1 tablespoon of olive oil.
  • Add the onions, carrots, celery, and garlic, cooking for 5-6 minutes until the vegetables begin to soften and the onions are translucent.
  • Add the mushrooms (if using) and cook for another 2-3 minutes.


Step 4: Add Flavorful Ingredients

  • Stir in the tomato paste, mixing well to coat the vegetables and bring out its rich, deep flavor.
  • Pour in the red wine (if using), scraping up any browned bits on the bottom of the pot for extra flavor.
